Artichokes are a superfood because of the number of antioxidants they have, especially the hearts. I was intimidated at first to make them at home, but it is actually quite simple.
Ingredients
- Fresh artichokes
- Water
- White wine
- Garlic gloves
- Salt and pepper
Directions
- Put about 2 inches of water, wine and garlic gloves in a large pot and bring to a simmer. Season the liquid with salt and pepper.
- In the meantime, prepare the artichokes. Wash under cold water. Use a sharp knife, cut off the bottom stems close to the base. Cut off the top inch of the artichokes and trim the tips of the leaves.
- Place the artichokes in the steaming liquid. Cover pot and simmer for about 30 minutes. The artichokes are done when you can insert a knife into the base without resistance.
- For an extra treat, with a little bit more work, add your favorite breadcrumb mixture. Take the steamed artichokes, open up the leaves, add breadcrumbs, drizzle with olive oil and bake at 350 degrees F for 15 minutes.
