Artichokes are a superfood because of the number of antioxidants they have, especially the hearts. I was intimidated at first to make them at home, but it is actually quite simple.
Ingredients
  • Fresh artichokes
  • Water
  • White wine
  • Garlic gloves
  • Salt and pepper
Directions
Steamed Artichoke
  1. Put about 2 inches of water, wine and garlic gloves in a large pot and bring to a simmer. Season the liquid with salt and pepper.
  2. In the meantime, prepare the artichokes. Wash under cold water. Use a sharp knife, cut off the bottom stems close to the base. Cut off the top inch of the artichokes and trim the tips of the leaves.
  3. Place the artichokes in the steaming liquid. Cover pot and simmer for about 30 minutes. The artichokes are done when you can insert a knife into the base without resistance.
  4. For an extra treat, with a little bit more work, add your favorite breadcrumb mixture. Take the steamed artichokes, open up the leaves, add breadcrumbs, drizzle with olive oil and bake at 350 degrees F for 15 minutes.
