I love making meals and snacks out of beans. They are so easy to prepare and they fill you up for hours.
Ingredients
  • ½ cup frozen chopped green beans
  • ½ cup canned garbanzo beans, rinsed and drained
  • ½ cup canned kidney beans, rinsed and drained
  • 3 tablespoons olive oil vinaigrette
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon red pepper flakes (optional)
  • ¼ teaspoon parsley
  • Sea salt and cracked black pepper to taste
Directions
  1. Defrost green beans for 2-3 minutes in microwave and drain if needed.
  2. Rinse and drain garbanzo and kidney beans and mix all three beans together in a bowl.
  3. Add vinaigrette, lemon juice, red pepper flakes, parsley, salt and pepper and give it a final mix. Add any fresh, crunchy vegetables you are craving to elevate it even more.
  4. It tastes even better when you let it marinate in the refrigerator for at least one hour first.
