I love making meals and snacks out of beans. They are so easy to prepare and they fill you up for hours.
Ingredients
- ½ cup frozen chopped green beans
- ½ cup canned garbanzo beans, rinsed and drained
- ½ cup canned kidney beans, rinsed and drained
- 3 tablespoons olive oil vinaigrette
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon red pepper flakes (optional)
- ¼ teaspoon parsley
- Sea salt and cracked black pepper to taste
Directions
- Defrost green beans for 2-3 minutes in microwave and drain if needed.
- Rinse and drain garbanzo and kidney beans and mix all three beans together in a bowl.
- Add vinaigrette, lemon juice, red pepper flakes, parsley, salt and pepper and give it a final mix. Add any fresh, crunchy vegetables you are craving to elevate it even more.
- It tastes even better when you let it marinate in the refrigerator for at least one hour first.
